Baked Veggie Tots (Carrot & Cauliflower)

Ingredients
  • 100 g carrot (3.5 oz)
  • 150 g cauliflower (5 oz)
  • 1/2 cup panko breadcrumbs
  • 1/3 cup grated cheese (“tasty” or mild cheddar)
  • 1 egg
  • 1/4 teaspoon garlic powder
Instructions
  1. Preheat oven to 180°C/350°F (fan-forced). Steam carrot (100 g) and cauliflower (150 g), then mash in a large bowl.
  2. Add panko (1/2 cup), egg (1), cheese (1/3 cup), and garlic powder (1/4 tsp). Mix to combine.
  3. Shape into tots (or nuggets).
  4. Bake at 180°C/350°F for about 20 minutes, until set and lightly golden.

Tip: If the mixture feels too moist, add a little extra panko to help it hold shape.
