Soft, baby-friendly muffins made with apple, banana, and carrot β€” a naturally sweet and nutritious snack perfect for little ones starting solids.

Ingredients

  • 2 small ripe bananas (190–200g)
  • 1 medium apple, peeled and finely grated
  • 1 small carrot, peeled and finely grated
  • 1 large egg
  • 140g flour (I used white spelt flour)
  • 2 heaped tsp baking powder
  • Optional: a handful of chocolate chips

Method

  1. Preheat the oven to 180Β°C / 350Β°F and line a muffin tray with 6–8 cases.
  2. Mash the bananas in a bowl until smooth.
  3. Add the grated apple and carrot, then mix in the egg.
  4. Stir in the flour and baking powder until just combined.
  5. Fold in the chocolate chips if using.
  6. Divide the mixture into the muffin cases.
  7. Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Let cool and buon appetito! πŸ˜‹
