Quick, golden mini waffles made with broccoli, eggs, and cheese β€” perfect for tiny hands and busy mornings.

Ingredients

  • 3 large broccoli florets (steamed)
  • 2 tbsp plain flour (all purpose flour)
  • 1⁄4 cup parmesan cheese
  • 1⁄4 cup tasty cheese (mild cheddar)
  • 2 eggs
  • 1⁄2 tsp garlic powder

Instructions

Create batter

Add steamed broccoli (steaming the broccoli will be your first step, if you don't have some leftover) to a bowl with all other ingredients. Mix well to combine.

Cook waffles

Spray waffle iron with olive oil spray. Add 1/3 of the mixture to your mini waffle iron (about two tablespoons). It should cover the waffle iron, but not be too overcrowded. Overcrowding/overfilling will result in batter spilling out the sides. You should only need to cook your waffles for 2–3 minutes (keep an eye on them, as they cook really quickly and brown very easily).
