Healthy Apple Mini Muffins 🍎🧁
These healthy mini apple muffins are sweet, full of apple flavor, and perfect for bite-sized snacks. They’re refined sugar-free, fiber-rich, toddler & kid friendly, portable, and freezer-friendly. Made with whole wheat flour and simple ingredients you likely have at home. Suitable for littles 9 months+.
Ingredients
- 1 cup whole wheat flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 apple, diced
- 1/4 cup + 1 teaspoon coconut oil, melted (divided)
- 1/3 cup + 1 tablespoon maple syrup (divided)
- 1/2 cup plain whole milk Greek yogurt
- 1 whole egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan. Set aside.
- In a small bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt; set aside.
- Warm a small saucepan over medium heat and melt 1 teaspoon coconut oil. Add the diced apples and cook, stirring occasionally, for 4 minutes. Stir in 1 tablespoon maple syrup, cook 1 minute, then remove from heat; set aside.
- In a large bowl, combine the remaining 1/4 cup melted coconut oil, 1/3 cup maple syrup, yogurt, egg, and vanilla. Whisk until smooth, then fold in the warm apples with a wooden spoon.
- Add the dry mixture to the wet and stir gently until no dry flour remains (do not overmix).
- Scoop evenly into a 24-cup mini muffin pan and bake at 350°F (175°C) for about 15 minutes, or until a toothpick comes out clean.
- Cool for 5 minutes, pop out the muffins, and serve. Store in an airtight container up to 3 days or freeze up to 3 months. Enjoy! 🙂
