Directions
- Preheat the oven to 375°F (190°C) and prep everything for smoother cooking. Peel and dice the tomato, chop the basil, and dice the fresh mozzarella.
- In a bowl, add the eggs along with the milk and whisk to combine.
- Add the diced tomato, basil, cheese, salt, and pepper, and mix well.
- Spray a muffin tin with oil and pour the egg mixture evenly into each cup.
