Ingredients

  • 2 small/medium gold potatoes
  • 1 cup green peas
  • 3/4 cup shredded cheese
  • 1/4 tsp turmeric
  • Pinch of black pepper

Directions

  1. Boil water in a pot, add the potatoes and peas, and cook slightly covered until soft, about 15 minutes.
  2. When ready, transfer potatoes and peas to a bowl and mash well. Add the shredded cheese, turmeric and black pepper, then mix until everything is combined.
  3. Form your potato cakes by scooping the mixture with a tablespoon and shaping it into small circular patties with your hands.
  4. Cook the patties:
    • Pan-fry option: Add a little olive oil to a non-stick pan and cook the patties over medium heat for 3–4 minutes on each side, until lightly golden.
    • Oven option: Place patties on a lined baking tray, spray with oil and bake at 400°F (200°C) for 15–20 minutes, flipping halfway through and spraying again if needed.
  5. The patties are very delicate when hot. Let them cool completely for at least 15 minutes before serving. Serve with your favourite sides such as mashed avocado or a simple yogurt dip, and enjoy!

❄️ Store cooled patties in an airtight container in the fridge for up to 2 days. Reheat gently in a pan or oven until warmed through, and let them cool before serving to your baby.
