Ingredients

- 1 1/3 cups white spelt flour or all-purpose flour
- 2 teaspoons baking powder
- 2 eggs
- 3 tablespoons melted butter
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- Toppings of choice – banana, berries, chocolate chips, etc.
Directions
- Preheat the oven to 375°F (190°C).
- Add all of the wet ingredients to a mixing bowl — eggs, melted butter, milk, vanilla extract, and maple syrup — and mix until well combined.
- Add the dry ingredients — flour and baking powder — and gently mix in until just combined. Try not to overmix.
- Add the batter to a mini muffin tin and top with your favorite add-ins like strawberries, blueberries, banana slices, chocolate chips, or sprinkles. If using a silicone muffin tin, there’s no need to grease it. For a regular non-stick tin, brush or spray with oil first.
- Bake for 17–19 minutes, or until a toothpick inserted in the center comes out clean. If using a large muffin tin, bake for 20–23 minutes.
- Let cool for about 15 minutes before serving and enjoy.
Baby & Storage Notes
These pancake muffins are suitable from around 12 months+, depending on your child’s readiness and chewing skills.
Great for meal prep: you can make a batch, keep some in the fridge for the next day, and freeze the rest. Reheat gently in the microwave for a few seconds until warm before serving.
