Ingredients

  • 3/4 cup frozen raspberries (about 6 small cubes)
  • 4 pitted dates
  • 1 tablespoon melted coconut oil
  • 1 1/3 cups oats (instant or rolled oats)
  • 1 teaspoon vanilla extract
  • 1/2 cup desiccated or shredded coconut, for rolling

Directions

  1. Add raspberries, dates, melted coconut oil, oats, and vanilla extract to a food processor and blend until the mixture comes together and is sticky. If it seems too dry, add a teaspoon of water, or lightly wet your hands when rolling.
  2. Add the shredded coconut to a separate plate or shallow bowl. Using a teaspoon, scoop small amounts of the mixture, roll into balls with your hands, and then roll each ball in the coconut to coat.
  3. Place the bliss balls in the fridge or freezer for at least 20 minutes to firm up before serving, then enjoy.

Storage Tips

Store Raspberry Bliss Balls in an airtight container in the fridge for up to 4 days, or freeze for up to 1 month. Serve slightly chilled or at room temperature.
