  • Easy to make: Simple ingredients, all in one bowl, ready in under 20 minutes of prep.
  • Great for meal prep: Freeze well for grab-and-go breakfasts or snacks.

Ingredients

  • 2 ripe bananas
  • 1 cup frozen or fresh raspberries
  • 1 egg
  • 1/2 cup whole milk plain yogurt
  • 1/4 cup avocado oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 1/3 cups white spelt flour or all-purpose flour
  • 2 teaspoons baking powder

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, add the ripe bananas and mash until smooth.
  3. Add the rest of the wet ingredients — egg, whole milk yogurt, avocado oil, honey and vanilla — and mix until well combined.
  4. In the same bowl, sift in the flour and baking powder and gently mix until just combined. Do not overmix.
  5. Add in the raspberries and lightly fold them into the batter. For frozen raspberries, break them up a little; for fresh raspberries, cut them in halves.
  6. Line a muffin tin with muffin liners or spray with oil. Spoon the batter evenly into the cups, filling each about 3/4 full.
  7. Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool for 10–15 minutes, then serve and enjoy!
