Ingredients

  • 2 eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (mozzarella & cheddar work great)
  • 1/2 cup white spelt flour or all-purpose flour
  • 1 tsp baking powder
  • Olive oil or avocado oil spray (for cooking)

Directions

  1. In a mixing bowl, combine eggs, cottage cheese, and shredded cheese.
  2. Add flour and baking powder. Mix until thick but scoopable.
  3. Heat a pan over medium heat and lightly grease with oil.
  4. Scoop small pancakes into the pan and gently flatten.
  5. Cook 3–4 minutes per side until golden and cooked through.
  6. Serve with veggies or fruit and enjoy!

Serving & Storage Notes

Serve cut into strips or small pieces. Great with avocado, soft veggies, or fruit.

❄️ Store in the fridge for up to 3 days. Freeze in a single layer, then store for easy reheating.
