Easy Granola Bars 🍯🥣

These easy granola bars are soft, naturally sweetened, and made with just four simple pantry ingredients. Perfect for toddlers, lunchboxes, or quick snacks on the go.

Simple Ingredients, Wholesome Benefits

Instant oats provide a soft texture and fiber to support digestion.

Date syrup adds natural sweetness plus iron, potassium, and magnesium.

Peanut butter offers plant-based protein and healthy fats for energy.

Vanilla extract adds warmth and flavor that kids love.

Bonus tip: Toast the oats in a dry pan for 3–5 minutes until lightly golden for better flavor, easier digestion, and improved texture.

Ingredients

  • 1⅓ cup instant oats
  • ¾ cup peanut butter
  • ¼ cup date syrup or honey
  • 1 tsp vanilla extract
  • Optional: chocolate chips or sprinkles

Directions

  1. Optional but recommended: toast the oats in a dry pan for about 3 minutes on medium heat. Let cool.
  2. In a mixing bowl, add peanut butter, date syrup, and vanilla. Mix well.
  3. Add the cooled oats and combine until fully incorporated. Mix in chocolate chips or sprinkles if using.
  4. Press the mixture firmly into a parchment-lined loaf pan, flattening the top with your hands.
  5. Chill in the fridge for 1–2 hours or until firm.
  6. Slice into bars or toddler-sized squares and enjoy!

Tips & Variations

  • For nut allergies, use sunflower seed butter, tahini, or almond butter.
  • Add chia seeds, hemp seeds, or ground flax for extra nutrition.
  • For older kids, mix in chocolate chips or sprinkles.

Storage Notes

Store in an airtight container in the fridge for up to 1 week. Freeze individually wrapped portions for up to 2 months.
