Soft baked shrimp patties with red bell pepper, fresh herbs and lemon. A flavorful protein-rich option for baby-led weaning lunches and dinners.

Finely chopped shrimp is combined with breadcrumbs, vegetables, herbs and lemon, then baked into soft patties that are easier for little hands to manage.

Ingredients

  • ยฝ lb raw shrimp, peeled and deveined
  • 3 tbsp bread crumbs or panko
  • 2 tbsp diced red bell pepper
  • 1 tbsp fresh parsley
  • 1 tbsp chopped green onion
  • 1 tsp dijon mustard
  • 1 tbsp freshly squeezed lemon juice
  • ยฝ egg, lightly beaten
  • ยผ tsp each garlic powder, black pepper and paprika

Instructions

  1. Heat oven to 400ยฐF. Line a baking sheet with parchment or a silicone baking mat.
  2. In a food processor, pulse the shrimp just to break it up, but don't finely chop or puree it.
  3. Add the remaining ingredients and pulse until everything is finely chopped and mixed, but not pureed or a smooth mixture.
  4. Using a 3 tablespoon scoop, scoop the mixture onto the prepared baking sheet. Use wet hands to flatten into cakes or patties.
  5. Bake for 9โ€“12 minutes, or until cooked through.
  6. For a little extra browning on top, broil for an additional minute.

Baby Serving Guide

6 months+: Cut the patties into strips about the width of 1โ€“2 adult fingers so they are easier to grasp without a pincer grip.

Around 9โ€“10 months+: Once baby develops a pincer grasp, cut into small bite-sized pieces about the size of an adult fingernail.

Baby-Friendly Tips

  • Shrimp: Shellfish is a common allergen.
  • Egg: Egg is a common allergen.
  • Wheat: Standard breadcrumbs or panko contain wheat.
  • Texture: Pulse the mixture until finely chopped, but do not blend it into a smooth purรฉe.
  • Cooking: Make sure the shrimp patties are fully cooked before serving.
  • Keep the finished patties soft and moist rather than overly browned or dry.
  • Allow to cool to a safe temperature before serving.

Recipe Variations

  • For an egg-free version, the egg can be left out.
  • For a gluten-free version, use gluten-free breadcrumbs.
  • Fresh dill, basil or cilantro can be used for different flavor variations.

Storage & Reheating

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 3 months.
  • Thaw in the refrigerator overnight or on the counter for up to 1 hour before reheating.
  • Reheat in a skillet over medium heat, flipping once. Add a splash of water and cover to help keep the patties moist.
  • They can also be reheated in an air fryer on the lowest setting or in the oven at 350ยฐF for a few minutes.
