Creamy Greek Yogurt Chicken Salad ππ₯£
A simple creamy chicken salad made with Greek yogurt, Dijon mustard and finely chopped green onions. Soft, moist and easy to serve for baby-led weaning.
This creamy chicken salad uses just a few simple ingredients and has a soft, moist texture that works well for babies, toddlers and the whole family.
Ingredients
- 1 can (5 oz) chicken breast
- 3 tbsp plain Greek yogurt (I like full fat)
- 1 tsp Dijon mustard
- 1 tbsp finely chopped green onions
- Optional: 1 teaspoon finely ground pecans
Instructions
- Drain the chicken, reserving the liquid in case you need a little extra moisture.
- Add the chicken to a bowl, breaking it up into very small shreds with a spoon or fork.
- Add the remaining ingredients (Greek yogurt, Dijon, green onion and pecans, if using). Stir to combine well.
- Taste and adjust as needed, adding reserved liquid from the chicken as needed if you need to thin the yogurt just a bit.
- Store in an airtight container in the refrigerator for up to 5 days. The flavors will meld and the chicken salad will get more flavorful as it sits for a few hours.
Baby Serving Guide
πΆ 6 months+: Serve a scoop directly on baby's plate so they can scoop it up with their palm.
You can also offer it on a preloaded soft spoon or spread a thin layer onto lightly toasted bread fingers.
Baby-Friendly Tips
- Chicken: Break the chicken into very small, moist shreds before mixing.
- Texture: Add a little of the reserved chicken liquid if needed to keep the mixture moist and easy to scoop.
- Milk: Greek yogurt contains dairy, which is a common allergen.
- Pecans: If using the optional pecans, keep them finely ground rather than serving whole pieces.
- Tree nuts: Pecans are a common allergen.
- Dijon mustard: Dijon is part of the original recipe and adds tang to the chicken salad.
Recipe Tips & Variations
- For a creamier texture, add more Greek yogurt.
- For more tang, add more Dijon mustard.
- If the mixture is too thick, add a little of the reserved chicken liquid.
- Finely shredded moist cooked chicken can be used in place of canned chicken.
- Mayonnaise can be used instead of Greek yogurt. Reduce or omit the Dijon if using mayonnaise.
- Finely chopped herbs such as parsley, dill or basil can also be added.
Storage
βοΈ Store in an airtight container in the refrigerator for up to 5 days.
The yogurt may separate slightly during storage. Simply stir the chicken salad again before serving.
Freezing is not recommended because Greek yogurt does not freeze well.
