Soft and savory chicken nuggets made with pumpkin, cheese and fine breadcrumbs. A simple finger-food snack with a tender center for babies and toddlers.

Pumpkin keeps these chicken nuggets soft and moist. Use fine breadcrumbs and avoid overcooking so the finished nuggets stay tender for little eaters.

Ingredients

  • 1 cup pumpkin, peeled and chopped 175g pumpkin, peeled and chopped
  • About 8.8 oz ground chicken 250g ground chicken
  • β…“ cup fine breadcrumbs 30g fine breadcrumbs
  • Β½ cup grated cheese 80g grated cheese
  • 1 egg 1 egg

Instructions

  1. Steam the pumpkin for 15 minutes, or until very soft.
  2. Mash the cooked pumpkin until smooth.
  3. Add the ground chicken, breadcrumbs, grated cheese and egg.
  4. Mix until a soft, slightly sticky mixture forms.
  5. Shape the mixture into small nuggets.
  6. Lightly oil a pan and heat over medium heat.
  7. Cook the nuggets for about 4 minutes per side, until lightly golden and completely cooked through.
  8. Cool slightly before serving.

9 months+: Serve as small, soft nuggets or break into soft manageable pieces.

Check that the center is tender and easy to squash between your fingers before offering it to baby.
