Why You’ll Love This
- Protein-rich from cottage cheese and eggs.
- Made with oats instead of traditional flour.
- Soft and easy to slice.
- Great for make-ahead snacks.
- Works with both sweet and savory toppings.
- Freezer-friendly for busy days.
Ingredients
- 1¼ cups full-fat cottage cheese (300 g), preferably lower sodium
- 2 eggs
- 3 tbsp olive oil or avocado oil
- 2 cups rolled oats (200 g)
- 2 tsp baking powder
- ¼ cup finely ground walnuts, optional
- ¼ cup raisins, softened and very finely chopped or processed, optional
- 2 tsp chia seeds
Instructions
- Preheat the oven to 350°F / 175°C.
- Lightly grease or line an 8 × 4-inch loaf pan with parchment paper.
- Add the cottage cheese, eggs, and olive or avocado oil to a food processor.
- Blend until smooth.
- Add the rolled oats, baking powder, finely ground walnuts, softened raisins, and chia seeds.
- Pulse just until combined. Avoid overmixing so the loaf does not become overly dense.
- Pour the thick batter into the prepared loaf pan and smooth the top.
- Bake for 35–40 minutes, or until golden and a toothpick inserted into the center comes out mostly clean.
- Allow to cool in the pan for 10–15 minutes.
- Cool further before slicing into soft pieces.
Baby Serving Note
Suitable from around 8 months+ when your baby is comfortable with finger foods and the loaf is served soft and in an age-appropriate shape. For younger babies, offer soft finger-sized strips that are easy to hold and manage.
Walnut & Raisin Safety
- Walnuts: Do not use chopped nut pieces for babies. Use only finely ground walnuts or a smooth nut butter if walnut has already been safely introduced.
- Raisins: Whole raisins can be difficult for babies to manage. Soften and finely chop or process them into the batter, or simply omit them for younger babies.
- Salt: This baby-friendly version leaves out the added salt.
Recipe Tips
- Do not overmix after adding the oats.
- Let the loaf cool before slicing for cleaner pieces.
- The batter will be thick – this is normal.
- Use parchment paper for easier removal.
- Try adding cinnamon, finely grated carrot, or spinach for different variations.
Serving Ideas
- Serve plain as a soft finger food.
- Pair with mashed berries or soft fruit.
- Add a thin layer of nut or seed butter if safely introduced.
- Serve with avocado for a savory option.
- Pair with plain yogurt for a more filling snack.
Storage
- Fridge: Store cooled slices in an airtight container for up to 3–4 days.
- Freezer: Freeze individual slices for up to 2 months.
- To serve: Thaw completely and warm gently if desired.
