Banana Mini Cakes π
β Suitable for babies 9 months+
β Freezer-friendly (store in muffin shape or slices)
β Defrost in the microwave for 30 seconds or at room temperature
Ingredients:
- 2 ripe bananas
- 1 cup oat bran
- 2 eggs
- 1 cup raisins
- 80ml coconut oil or sunflower oil
- 1 teaspoon baking powder
- Cinnamon to taste (optional)
Instructions:
- Blend all ingredients in a blender, except for the baking powder.
- Mix the baking powder separately and then gently fold it into the batter.
- Bake in the Air Fryer at 180Β°C (350Β°F) for 10 minutes or in the oven at low temperature for about 30 minutes in a greased pan with oat flour.
- Keep an eye on it, as baking time may vary depending on the oven power and pan size.
Storage:
β At room temperature: Store in an airtight container for up to 2 days.
β In the fridge: Keep refrigerated for up to 3 days.
Freezing:
β For longer storage, freeze the mini cakes. Let them cool completely before freezing.
β Store in individual portions, wrapped in plastic wrap or freezer-safe bags, removing as much air as possible.
β They can be stored in the freezer for up to 3 months.
Defrosting:
β Take the portion needed out of the freezer and let it sit at room temperature for a few minutes or heat it in the microwave for 30 seconds.
β You can also warm it up in a low-temperature oven for a few minutes.
