These banana mini cakes are soft, naturally sweetened, and perfect for babies 9 months+. A nutritious and easy snack for little ones!

Banana Mini Cakes ๐ŸŒ

โœ” Freezer-friendly (store in muffin shape or slices)
โœ” Defrost in the microwave for 30 seconds or at room temperature

Ingredients:

  • 2 ripe bananas
  • 1 cup oat bran
  • 2 eggs
  • 1 cup raisins
  • 80ml coconut oil or sunflower oil
  • 1 teaspoon baking powder
  • Cinnamon to taste (optional)

Instructions:

  1. Blend all ingredients in a blender, except for the baking powder.
  2. Mix the baking powder separately and then gently fold it into the batter.
  3. Bake in the Air Fryer at 180ยฐC (350ยฐF) for 10 minutes or in the oven at low temperature for about 30 minutes in a greased pan with oat flour.
  4. Keep an eye on it, as baking time may vary depending on the oven power and pan size.

Storage:

โœ” At room temperature: Store in an airtight container for up to 2 days.
โœ” In the fridge: Keep refrigerated for up to 3 days.

Freezing:

โœ” For longer storage, freeze the mini cakes. Let them cool completely before freezing.
โœ” Store in individual portions, wrapped in plastic wrap or freezer-safe bags, removing as much air as possible.
โœ” They can be stored in the freezer for up to 3 months.

Defrosting:

โœ” Take the portion needed out of the freezer and let it sit at room temperature for a few minutes or heat it in the microwave for 30 seconds.
