Apple & Coconut Mini Cakes 🍏🥥

Recommended age: 9 months+
✔ Can be baked, air-fried, or made as mini pancakes

Ingredients:

  • 2 small apples (100g)
  • 2 tablespoons unsweetened shredded coconut (30g)
  • 2 eggs
  • 2 tablespoons oats
  • 100ml water
  • 1 teaspoon baking powder
  • Optional sweetener: 4 pitted dried plums or ½ cup white raisins

Instructions:

  1. Blend all ingredients in a blender until smooth and well combined.
  2. Pour the batter into paper or silicone molds.
  3. Bake: 7 minutes in the Air Fryer or 15 minutes in the oven at 180°C (350°F).
  4. Alternative: Make mini pancakes in a non-stick pan, cooking over low heat with the lid on for 10 minutes.

Storage:

At room temperature: Store in an airtight container for up to 2 days.
In the fridge: Keep refrigerated for up to 3 days.

Freezing:

✔ Let the mini cakes cool completely before freezing.
✔ Store in individual portions, wrapped in plastic wrap or freezer-safe bags, removing excess air.
✔ Can be stored in the freezer for up to 3 months.

Defrosting:

✔ Remove the needed portion from the freezer and let it sit at room temperature for a few minutes.
✔ Or heat in the microwave for 30 seconds or in a low-temperature oven for a few minutes.
