These ABC muffins are a fun back-to-school snack with no refined sugars—perfect for babies. Use a very ripe banana (plus the apple) to sweeten naturally. Carrots add gentle texture and cinnamon adds cozy flavor. Grate apple and carrot, mix with mashed banana and wet ingredients, fold in dries, scoop into a greased mini muffin pan, bake, and enjoy. We love them with peanut butter or jam. Freezer-friendly and great for on-the-go!

Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 very ripe banana
  • 2/3 cup grated apple
  • 1/3 cup grated carrot
  • 1/4 cup melted coconut oil
  • 1/2 cup milk of your choice
  • 1 whole egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan. Set aside.
  2. In a small bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  3. In a large bowl, mash the banana completely, then mix in the grated apple and carrot. Add the coconut oil, milk, egg, and vanilla; mix until combined.
  4. Fold the dry ingredients into the wet until just combined. Scoop the batter evenly into the muffin pan.
  5. Bake at 350°F for 15–17 minutes, until a toothpick comes out clean.
  6. Let cool 5–10 minutes, then pop them out. Enjoy warm or at room temperature. Store in an airtight container up to 3 days or freeze up to 3 months.

Serving Tip

Delicious with a thin spread of peanut butter or jam.
