Avocado & Courgette Fingers 🥑

Soft, cheesy and veggie-packed fingers perfect from first bites!
Ingredients
- 1/2 avocado
- 40g courgette (grated & squeezed)
- 3 eggs
- 40g cheddar cheese (grated)
Method
- Preheat oven to 180°C (350°F)
- Mash avocado in a baking dish
- Add courgette, eggs and cheese, mix well
- Bake for 20–25 minutes until golden
- Cool slightly, cut into fingers and serve
Recipe Tips
- Use silicone moulds or a baking dish
- Don’t make the mixture too thick
Storage
- Fridge: up to 2 days
- Freezer: up to 2 months
- Reheat in pan or oven
