Avocado & Courgette Fingers 🥑

Soft, cheesy and veggie-packed fingers perfect from first bites!

Ingredients

  • 1/2 avocado
  • 40g courgette (grated & squeezed)
  • 3 eggs
  • 40g cheddar cheese (grated)

Method

  1. Preheat oven to 180°C (350°F)
  2. Mash avocado in a baking dish
  3. Add courgette, eggs and cheese, mix well
  4. Bake for 20–25 minutes until golden
  5. Cool slightly, cut into fingers and serve

Recipe Tips

  • Use silicone moulds or a baking dish
  • Don’t make the mixture too thick

Storage

  • Fridge: up to 2 days
  • Freezer: up to 2 months
  • Reheat in pan or oven
