Baby Friendly Banana & Coconut Bread 🍌🥥

Ingredients

  • 3 bananas
  • 2 eggs
  • 1/2 cup greek yoghurt
  • 2 1/2 cups self-raising flour
  • 2/3 cup desiccated coconut
  • 1/3 cup milk

Method

  1. Preheat oven to 180°C (350°F) and mash bananas
  2. Add eggs, milk and yoghurt and whisk
  3. Add flour and coconut
  4. Mix until combined
  5. Pour into loaf tin
  6. Bake for 40 minutes
  7. Cool and serve (optional butter + maple syrup)
