Ingredients
- 3 bananas
- 2 eggs
- 1/2 cup greek yoghurt
- 2 1/2 cups self-raising flour
- 2/3 cup desiccated coconut
- 1/3 cup milk
Method
- Preheat oven to 180°C (350°F) and mash bananas
- Add eggs, milk and yoghurt and whisk
- Add flour and coconut
- Mix until combined
- Pour into loaf tin
- Bake for 40 minutes
- Cool and serve (optional butter + maple syrup)
