Banana Date Loaf (Healthy, Toddler-Friendly) 🍌🌰
This incredible banana date loaf is super healthy, toddler friendly, and refined sugar free. Sweetened with Medjool dates and bananas, topped with pecans (or walnuts) for a lovely crunch, and perfect with a little butter. Fluffy, moist, and keeps well for a few days in an airtight container — a must try!
Ingredients
- 2 bananas
- 10 Medjool dates, pitted and chopped
- 2 teaspoons vanilla essence
- 1/4 cup Greek yoghurt
- 2 eggs
- 150g unsalted butter (5 oz)
- Pecans (a handful, roughly chopped) — or walnuts
- 2 cups self-raising flour
Instructions
- Prepare the dates: Soak 10 pitted, chopped Medjool dates in 1 cup hot water (kettle just boiled). After 10 minutes, mash into a rough paste. Preheat oven to 180°C / 350°F.
- Prepare the banana: In a large mixing bowl, mash 2 ripe bananas.
- Wet ingredients: Add mashed dates (with soaking water), 150g/5 oz melted unsalted butter, 2 tsp vanilla essence, 2 eggs, and 1/4 cup Greek yoghurt. Stir to combine.
- Dry ingredients: Add 2 cups self-raising flour and stir until just combined.
- Pan & topping: Grease a loaf tin with butter and line with baking paper. Pour in batter, smooth the top, and scatter chopped pecans (or walnuts) over the surface.
- Bake: Bake at 180°C / 350°F for 35–40 minutes, until the top is golden and a skewer inserted comes out clean. Cool 10 minutes before slicing. Best served warm with butter.
