These banana mini cakes are soft, naturally sweetened, and perfect for babies 9 months+. A nutritious and easy snack for little ones!

Banana Mini Cakes 🍌

βœ” Defrost in the microwave for 30 seconds or at room temperature

Ingredients:

  • 2 ripe bananas
  • 1 cup oat bran
  • 2 eggs
  • 1 cup raisins
  • 80ml coconut oil or sunflower oil
  • 1 teaspoon baking powder
  • Cinnamon to taste (optional)

Instructions:

  1. Blend all ingredients in a blender, except for the baking powder.
  2. Mix the baking powder separately and then gently fold it into the batter.
  3. Bake in the Air Fryer at 180Β°C (350Β°F) for 10 minutes or in the oven at low temperature for about 30 minutes in a greased pan with oat flour.
  4. Keep an eye on it, as baking time may vary depending on the oven power and pan size.

Storage:

βœ” At room temperature: Store in an airtight container for up to 2 days.
βœ” In the fridge: Keep refrigerated for up to 3 days.

Freezing:

βœ” For longer storage, freeze the mini cakes. Let them cool completely before freezing.
βœ” Store in individual portions, wrapped in plastic wrap or freezer-safe bags, removing as much air as possible.
βœ” They can be stored in the freezer for up to 3 months.

Defrosting:

βœ” Take the portion needed out of the freezer and let it sit at room temperature for a few minutes or heat it in the microwave for 30 seconds.
βœ” You can also warm it up in a low-temperature oven for a few minutes.
