Ingredients

  • 1 ripe banana
  • Β½ cup plain yogurt
  • 1Β½ – 1ΒΎ cups self-rising flour
  • β…“ cup blueberries (wild blueberries work best)
  • 1 egg or milk (for egg wash)

Directions

  1. Preheat oven to 350Β°F (175Β°C) and line a baking tray with parchment paper.
  2. Mash the banana until smooth, then stir in the yogurt.
  3. Gradually mix in 1Β½ cups of flour until a sticky dough forms. Add more flour if needed.
  4. Gently fold in the blueberries.
  5. Flour your surface well and divide dough into 4–6 portions.
  6. Shape into balls, poke a hole in the center, and stretch to form bagels.
  7. Place on tray, brush with egg wash or milk, and bake for 15 minutes.
  8. Cool slightly, serve, and enjoy!

Room temperature: Up to 2 days in an airtight container.
Fridge: Up to 4 days β€” reheat or toast before serving.
