This easy tortilla is such a nice way to serve egg and broccoli in one simple meal. It’s quick to make, easy to hold, and can be served in strips or triangles for little ones.
Ingredients
- 1 egg
- 1 small tortilla
- Handful of grated cheese
- 1–2 broccoli florets, cooked
- Olive oil or butter, for cooking
Recipe Tips
- Use a pan the same size as your tortilla for the perfect fit
- For younger babies, serve it open and cut into strips
Method
- Beat the egg in a small bowl.
- Heat a non-stick pan on medium-high heat and grease with butter or olive oil.
- Pour the egg into the pan and spread it evenly.
- Top with cooked broccoli and grated cheese.
- Place the tortilla on top and cook for 2–3 minutes, until the egg is set.
- Flip carefully and cook for another minute.
- Cut into triangles or serve folded.
- Let cool slightly before serving.
