Broccoli Omelette 🥦
Soft, baby-friendly omelette blended with broccoli. Quick to make, easy to hold, and perfect for early weaning.
Ingredients
- 2 eggs
- 1–2 raw broccoli florets
- 2 tablespoons self-raising flour (or plain/whole wheat/spelt)
- A big handful of grated cheddar cheese or Parmesan (optional)
- A little olive oil for cooking
Method
- Add the eggs, broccoli, flour, and cheese to a blender and pulse until well mixed.
- Heat the olive oil in a non-stick pan over medium heat.
- Pour the mixture into the pan and cook until both sides are golden and fully cooked.
- Allow to cool slightly, roll it up, cut into strips, and serve.
