These chicken and sweet potato nuggets are everything you want them to be β€” healthy, a little cheesy, perfectly seasoned, and pan-fried until golden. Sweet potato adds natural sweetness, paprika + garlic powder bring a gentle smoky-savoury flavour, and panko helps with that beautiful colour. Great warm or cold for lunch, dinner, or snacks. They also freeze really well, so feel free to double the batch with 500g chicken mince and save some for busy days!

Ingredients

  • 250 g chicken mince (about 9 oz)
  • 1 cup mashed sweet potato
  • 1⁄4 cup panko bread crumbs
  • 1⁄2 teaspoon paprika
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 cup tasty / cheddar cheese, grated

Instructions

  1. Cook the sweet potato: Peel, chop and steam/boil until tender, OR microwave. To microwave: cut off each end, poke the sweet potato all over (10–15 times with a knife), place on a plate, microwave 10 minutes, flip, then microwave another 5–10 minutes depending on size and your microwave.
  2. Mash: Mash the sweet potato really well. You’re aiming for about 1 cup total mashed sweet potato.
  3. Grate cheese: Grate 1/2 cup of tasty / cheddar cheese.
  4. Combine: Add chicken mince, mashed sweet potato, panko, paprika, garlic powder, and grated cheese to a bowl. Mix first with a fork, then with your hands until well combined.
  5. Shape: Use your hands to form nugget shapes. You should get around 20 nuggets, but make them any size you like.
  6. Pan-fry: Warm a little olive oil in a pan. Fry nuggets ~3 minutes per side, until golden brown on the outside and cooked through in the center. Enjoy warm or cold.
