What You’ll Need
- Chicken mince / ground chicken (250g / 9 oz): the protein-rich base of the nuggets
- Zucchini, grated (1/2 zucchini): adds moisture, fibre, and extra nutrients
- Egg (1): helps bind everything together
- Cheese (1/4 cup): adds a mild cheesy flavour
- Panko breadcrumbs (1/2 cup): makes the mixture easier to shape
- Garlic powder (1/4 tsp): gives a subtle savoury flavour
How to Make Your Nuggets
- Grate the zucchini and squeeze out the excess liquid.
- Add the zucchini to a large bowl, then add the grated cheese.
- Add the remaining ingredients: panko breadcrumbs, egg, ground chicken, and garlic powder.
- Mix well until everything is combined.
- Shape into nuggets, fingers, or tots.
- Pan fry in a little olive oil until golden on both sides and cooked through.
Cooking Tip
If you don’t have time to cook them in a fry pan, you can also bake them at 180°C / 350°F for about 20 minutes.
