
Creamy Veggie Orzo 🤗✨
A cozy, creamy orzo cooked with soft broccoli, carrots, and garlic, finished with cream cheese and parmesan. Simple, nourishing, and weeknight-fast.
Ingredients
- 2 tbsp olive oil or butter
- 1 cup finely chopped broccoli florets
- 1 cup shredded carrots
- 2 garlic cloves, minced
- 1 cup orzo
- 2 1/2 cups chicken broth
- 1 tbsp cream cheese
- 1/2 cup parmesan cheese
Method
- Prep the veg: finely chop broccoli and shred carrots.
- Warm oil or butter in a medium pot. Sauté broccoli, carrots, and garlic for about 5 minutes, until fragrant.
- Add orzo and broth. Bring to a boil, then simmer 10–15 minutes, stirring occasionally, until most liquid is absorbed and orzo is tender.
- Turn off heat and stir in cream cheese and parmesan until melted and creamy.
- Let cool slightly before serving.
