Creamy Veggie Orzo 🤗✨

A cozy, creamy orzo cooked with soft broccoli, carrots, and garlic, finished with cream cheese and parmesan. Simple, nourishing, and weeknight-fast.

Ingredients

  • 2 tbsp olive oil or butter
  • 1 cup finely chopped broccoli florets
  • 1 cup shredded carrots
  • 2 garlic cloves, minced
  • 1 cup orzo
  • 2 1/2 cups chicken broth
  • 1 tbsp cream cheese
  • 1/2 cup parmesan cheese

Method

  1. Prep the veg: finely chop broccoli and shred carrots.
  2. Warm oil or butter in a medium pot. Sauté broccoli, carrots, and garlic for about 5 minutes, until fragrant.
  3. Add orzo and broth. Bring to a boil, then simmer 10–15 minutes, stirring occasionally, until most liquid is absorbed and orzo is tender.
  4. Turn off heat and stir in cream cheese and parmesan until melted and creamy.
  5. Let cool slightly before serving.
