Ingredients
- 2 large or 3 small apples
- 2/3 cup maple syrup
- 1/2 cup oil (avocado, olive, or coconut)
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1/2 cup water (room temperature)
- 2 cups white spelt flour or all-purpose (sifted)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp baking soda
Directions
- Preheat oven to 350°F (180°C).
- Peel and slice apples into very thin slices.
- Add apples, maple syrup, oil, vanilla, lemon juice, and water to a bowl and mix well.
- Sift in flour, cinnamon, baking powder, and baking soda, mixing until fully combined.
- Line a baking tray with parchment paper or grease with oil and add the batter.
- Bake for 30–35 minutes, until a toothpick comes out clean.
- Let cool for 15 minutes, then serve and enjoy.
