This egg tortilla roll is a simple, satisfying meal that comes together in minutes. It’s great for busy days and can be served sliced into baby-safe pieces for little hands to hold.
Ingredients
- 1 egg
- 1 tortilla
- A handful of grated cheese
- A little extra virgin olive oil
Recipe Tips
- Use a pan that’s the same size as your tortilla for best results.
- Small-sized tortillas work best.
- Try adding finely chopped veggies like spinach for extra nutrition.
- For a gluten-free version, use a certified gluten-free tortilla.
Method
- Beat the egg in a small bowl.
- Heat a pan over medium-high heat and grease it lightly with olive oil.
- Pour the beaten egg into the pan and spread it out evenly.
- Sprinkle the cheese on top of the egg.
- Lay the tortilla flat over the egg and cheese mixture.
- Cook for 2–3 minutes or until the egg is fully set.
- Carefully flip the tortilla using a spatula and cook the other side briefly.
- Transfer to a plate, let it cool slightly, then roll it up and slice into pieces.
