This egg tortilla roll is a simple, satisfying meal that comes together in minutes. It’s great for busy days and can be served sliced into baby-safe pieces for little hands to hold.

Ingredients

  • 1 egg
  • 1 tortilla
  • A handful of grated cheese
  • A little extra virgin olive oil

Recipe Tips

  • Use a pan that’s the same size as your tortilla for best results.
  • Small-sized tortillas work best.
  • Try adding finely chopped veggies like spinach for extra nutrition.
  • For a gluten-free version, use a certified gluten-free tortilla.

Method

  1. Beat the egg in a small bowl.
  2. Heat a pan over medium-high heat and grease it lightly with olive oil.
  3. Pour the beaten egg into the pan and spread it out evenly.
  4. Sprinkle the cheese on top of the egg.
  5. Lay the tortilla flat over the egg and cheese mixture.
  6. Cook for 2–3 minutes or until the egg is fully set.
  7. Carefully flip the tortilla using a spatula and cook the other side briefly.
  8. Transfer to a plate, let it cool slightly, then roll it up and slice into pieces.
  9. Buon appetito!

Storage

  • Best enjoyed immediately.
  • Not suitable for storage, as the tortilla may become soggy.
