These homemade mushroom potato gem cups are crispy, cheesy, and packed with rich savoury flavour. Made with mushrooms, eggs, cheese, and seasoned potato gems, theyโ€™re a fun brunch or snack idea for the whole family.

These little cups are such a fun way to serve mushrooms, eggs, and cheese in one tasty bite. The potato gems turn golden and crisp, while the mushroom filling stays soft and full of flavour.

Ingredients

  • 450 g potato gems
  • 100 g mushrooms
  • 1 tablespoon butter
  • 10 g Mingle Garlic and Herb Seasoning
  • 3 eggs
  • 1/2 cup tasty cheese or mild cheddar
  • Chives

Instructions

  1. Heat the oven to 180ยฐC / 360ยฐF and bake the potato gems for 10 minutes.
  2. Take them out and squish them into cup shapes using a tablespoon measuring spoon.
  3. Finely dice the mushrooms, grate the cheese, and chop the chives.
  4. Sautรฉ the mushrooms over medium-high heat in the butter with the garlic and herb seasoning.
  5. Once the mushrooms are soft, add them to a pouring jug with the whisked eggs.
  6. Press the potato gems into cup shapes again if needed using a teaspoon measuring spoon.
  7. Add a small amount of cheese to each cup.
  8. Pour in the mushroom and egg mixture, being careful not to overfill.
  9. Bake for a further 15 minutes, or until the egg is cooked through and the potato gems are golden brown.
  10. Sprinkle with chives and enjoy.

Baby Serving Note

Suitable from 12 months+. Because this recipe uses seasoned potato gems and a savoury seasoning blend, it is better suited to older babies and toddlers. Let them cool well and serve in small, manageable pieces.

Serving Idea

These are lovely for brunch, lunch, or as a savoury snack plate. Serve warm once slightly cooled.
