  • Finely chopped spinach

I used frozen spinach, but fresh spinach works even better!

Preparation

Quantities are flexible. Mix the egg and spinach together, then cook in a pan lightly greased with olive oil over low heat until golden on both sides.

Free from sugar, gluten, and dairy
Best consumed immediately after preparation. Store in the fridge and consume by the next day.
