Why Kids and Adults Love It

Kids enjoy this because the chicken stays tender, juicy, and easier to chew than dry chicken breast. Adults love it because it’s healthy, flavorful, and easy to turn into different meals all week long.

Ingredients

  • 4–6 chicken breasts (try to get thicker pieces)
  • 1/4 cup olive oil or avocado oil
  • Juice of 1/2 lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp paprika

Directions

  1. Add oil, lemon juice, and all seasonings to the chicken breast. Massage everything in well and marinate for at least 30 minutes.
  2. Preheat the oven to 375°F.
  3. Sear the chicken in a hot pan over high heat for 2 minutes on each side until golden and crispy outside.
  4. Transfer to a parchment-lined tray and bake for 15 minutes. If the chicken is thinner, bake for about 10 minutes.
  5. Serve with your favorite sides like pasta, roasted vegetables, mashed potatoes, fluffy rice, or a dip.

The Secret to Juicy Chicken Breast

  • Choose slightly thicker chicken breasts when possible
  • Thin pieces cook faster and can dry out more easily
  • The longer the chicken marinates, the softer and juicier it becomes
  • Lemon juice helps tenderize the meat naturally
  • If you have time, marinate in the morning and cook before dinner

How to Serve

  • Over fluffy rice
  • With a fresh salad
  • Alongside roasted vegetables
  • With mashed potatoes
  • Over pasta
  • Inside a wrap or pita for lunch
  • Sliced thin for meal prep lunches

How to Serve to Kids

  • Slice or cut into small bite-size pieces
  • Serve with mashed potatoes or mashed sweet potatoes
  • Add rice, roasted veggies, cucumber, or tomato on the side
  • Pair with yogurt dip, hummus, ketchup, or another mild dip
  • Shred slightly for younger eaters who do better with softer textures

Storage & Reheating

  • Fridge: Let cool completely, then store in an airtight container for up to 4 days
  • Freezer: Freeze in a freezer-safe container or bag for up to 2 months
  • To reheat: Enjoy cold or warm in the toaster oven, oven, or stovetop with a splash of water or broth

Substitutions

  • Oil: olive oil, avocado oil, melted butter, or another neutral oil
  • Chicken: boneless chicken thighs or tenders also work
  • Lemon juice: fresh is best, but bottled works too; lime juice also works in a pinch
