Lemon Raspberry Banana Oat Bread 🍋🍓🍌
A moist banana breakfast loaf with raspberries, lemon and oats, naturally sweetened with ripe fruit and fruit puree.
Ripe banana, apple or pear puree and raspberries bring natural sweetness to this fruity breakfast loaf. Keep the center moist and fully baked without overbaking until dry.
Ingredients
- ¾ cup butter, melted 150g butter, melted

Instructions
- Preheat the oven to 375°F (190°C) and line a loaf pan with baking paper.
- In a large bowl, whisk together the mashed bananas, milk, melted butter, eggs, apple or pear puree and lemon juice until thoroughly combined.
- In a separate bowl, combine the cinnamon, self-raising flour and oats.
- Add the dry mixture to the wet mixture and stir until completely combined.
- Add the fresh or frozen raspberries and fold them gently into the batter.
- Pour the mixture into the lined loaf pan.
- Bake for 35–40 minutes, until golden brown or until a toothpick inserted into the bread comes out clean.
- Allow the loaf to cool before serving.

12–23 months: Serve the bread fully cooled and cut into manageable pieces, strips or small slices depending on your toddler's feeding skills.
Keep the loaf moist and tender rather than baking until dry or firm.
Check larger raspberry pieces, particularly those near the surface, and gently flatten or break them up if needed before serving.
A piece of the loaf can also be served with plain full-fat yogurt for an easy breakfast combination.
