Serves: 12 (Adjust the portion size as needed)

Ingredients:

  • ½ cup heavy cream
  • 3 large eggs
  • ¾ teaspoon vanilla extract
  • ½ cup Brown Swerve (sugar substitute), lightly packed
  • 2 ½ cups almond flour
  • ⅓ cup unflavored whey protein powder (can substitute with egg white protein)
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ⅓ cup unsweetened dark chocolate chips, plus 1 tablespoon (or keto mini chocolate chips)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with paper liners. Alternatively, you can use silicone muffin cups for easy removal after baking.
  2. In a large bowl, combine the heavy cream, eggs, and vanilla extract. Add the Brown Swerve sweetener and whisk until everything is well blended. Use the back of a fork to break up any lumps in the sweetener.
  3. Next, add the almond flour, protein powder, baking powder, and salt to the wet ingredients. Stir everything together until the mixture is smooth and fully incorporated.
  4. Mix in ⅓ cup of chocolate chips, ensuring they’re evenly distributed throughout the batter.
  5. Divide the batter evenly among the muffin cups in your prepared muffin tin. Top each muffin with a few more chocolate chips for an extra chocolatey finish.
  6. Bake the muffins for 18 to 25 minutes, or until they are golden brown and firm to the touch. You can also check them with a toothpick—if it comes out clean, they’re ready!
  7. Once done, remove the muffins from the oven and allow them to cool in the tin. Enjoy them fresh out of the oven, or store them in an airtight container for a later snack or breakfast.

These low-carb chocolate chip muffins are a great way to indulge in a sweet treat without straying from your healthy eating goals.
