What You Need

  • Food processor

Ingredients

  • 1 cup cubed frozen mango
  • 3 Medjool dates, pitted
  • 1 tsp vanilla
  • 1 tbsp melted coconut oil
  • 1 cup + 2 tbsp instant or rolled oats
  • 1 tbsp water
  • Coconut shreds for coating

Directions

  1. Add the frozen mango, dates, melted coconut oil, vanilla, oats, and water to a food processor.
  2. Blend until the mixture comes together, about 30 seconds.
  3. If the mixture feels too wet, add 1–2 tablespoons more oats.
  4. If it feels too dry, add another small splash of water.
  5. Scoop out tablespoon-sized amounts and roll into bite-size balls.
  6. Roll each ball in coconut shreds.
  7. Place in an airtight container and chill in the fridge for at least 15–20 minutes to firm up.
  8. Serve and enjoy.

Storage

  • Store in an airtight container in the fridge for 5–7 days
  • Freeze for up to 1 month
  • If frozen, thaw in the fridge before serving

Best suited for 12 months+ because these are soft but still dense little bites made with dates and oats. For younger toddlers, serve in smaller pieces and always supervise while eating.
