- 1 apple, grated: adds natural sweetness and fibre

- 1/2 zucchini, liquid squeezed out: adds moisture and nutrients

- 2 tablespoons maple syrup: adds extra sweetness and flavour
- 1/2 cup extra virgin olive oil: keeps the muffins moist
- 2 cups self-raising flour: the soft muffin base
- 1/2 teaspoon baking soda: gives extra lift

How to Make Muffins
- Mash the banana in a large bowl.
- Add the grated apple, grated carrot, grated zucchini with liquid squeezed out, eggs, maple syrup, and olive oil. Whisk together.
