What You Need to Make These Maple Veggie Muffins

  • 1 apple, grated: adds natural sweetness and fibre
  • 1 carrot, grated: adds sweetness and a lovely colour
  • 1/2 zucchini, liquid squeezed out: adds moisture and nutrients
  • 1 banana: helps bind the mixture and adds natural sweetness
  • 2 eggs: help bind everything together
  • 2 tablespoons maple syrup: adds extra sweetness and flavour
  • 1/2 cup extra virgin olive oil: keeps the muffins moist
  • 2 cups self-raising flour: the soft muffin base
  • 1/2 teaspoon baking soda: gives extra lift
  • 1 teaspoon cinnamon: adds warmth and flavour

How to Make Muffins

  1. Mash the banana in a large bowl.
  2. Add the grated apple, grated carrot, grated zucchini with liquid squeezed out, eggs, maple syrup, and olive oil. Whisk together.
  3. Add the self-raising flour, baking soda, and cinnamon.
  4. Mix well with a wooden spoon.
  5. Grease a muffin tin with butter or use a silicone muffin mould.
  6. Bake and enjoy warm with butter.

Baby Serving Note

Suitable from 12 months+ because this recipe contains maple syrup. Serve in soft, manageable pieces once cooled slightly.
