Nutritional Benefits
This kid-friendly dinner is full of hidden veggie goodness from the broccoli and carrots, providing vitamins A and C, fiber and antioxidants. Orzo offers energy-boosting carbohydrates, while the cheese adds protein and calcium — creating a balanced, satisfying meal for growing kids and hungry adults.
Ingredients
- 2 cups orzo
- 2–3 tablespoons butter
- 1 large or 2 small carrots, finely chopped
- 1/2 head broccoli, finely chopped
- 2–3 garlic cloves, finely chopped
- 4 cups broth of choice (chicken or vegetable)
- 1 cup shredded cheese (mozzarella, cheddar or a mix)
- 1/2 teaspoon salt (omit for younger babies)
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
Directions
- Prep everything beforehand for a smoother cooking process. Finely chop the broccoli, carrot and garlic. You can also use frozen veggies if you prefer.
- In a large pan or deep skillet, melt 1–2 tablespoons of butter over medium heat. Add the salt (if using), onion powder, paprika, garlic, broccoli and carrots and sauté for about 2 minutes.
- Add the orzo and stir well to coat it in the butter and seasonings.
- Pour in the broth and bring to a boil. You can use all 4 cups of broth, or 2 cups of broth and 2 cups of water.
- Once boiling, cover the pan and cook on low heat for about 25 minutes (around a number 3 setting on the stove). Check a couple of times during cooking, giving it a stir to make sure the orzo isn’t sticking to the bottom.
- When the orzo is tender and most of the liquid is absorbed, turn off the heat. Add the remaining tablespoon of butter and the shredded cheese, then stir until everything is creamy and well combined.
- Let cool for 10–15 minutes before serving, then dish up and enjoy!
Baby & Storage Notes
👶🏼 Suitable from 11 months. For younger eaters, allow to cool well and serve in small, soft spoonfuls or slightly mashed.
Refrigerator: Store leftovers in an airtight container in the fridge for up to 3 days. The orzo stays soft and creamy, great for reheating.
Freezer: For longer storage, freeze portions in freezer-safe containers for up to 1 month. The texture may soften a little once thawed, but it’s still delicious.
