Potato and Carrot Patties!

Ingredients:

  • 2 medium-sized boiled potatoes (or 1 large)
  • 1 medium boiled carrot
  • Parsley for seasoning (or substitute with leafy greens like spinach or kale)
  • 1 egg
  • 2 tablespoons of oat flour

Preparation:

  1. Mash the boiled potatoes and carrot until smooth.
  2. Add the egg, oat flour, and season with parsley or other leafy greens. Mix well (the texture will be soft).
  3. Heat a greased skillet and form small pancake-shaped patties.
  4. Cook on both sides over medium heat until golden brown.

Recommended age: +6 months
Free from sugar and gluten (if gluten-free oats are used)
Storage: Best consumed immediately. If necessary, refrigerate and consume within 24 hours.
