Ingredients
- 200 g pumpkin (7 oz measured raw/uncooked)
- 200 g cauliflower florets (7 oz measured raw/uncooked)
- 1/3 cup shredded or grated cheese (mild cheddar)
- 1/2 cup panko breadcrumbs
- 1 egg
- 1/2 teaspoon garlic powder
Instructions
- Steam: Steam the pumpkin and cauliflower until fork-tender (about 10 minutes).
- Mash: Roughly mash the cooked vegetables using a fork or potato masher.
- Add ingredients: In a bowl combine the mashed pumpkin and cauliflower with grated cheese, panko breadcrumbs, egg and garlic powder.
- Mix: Mix everything until well combined.
- Shape: Scoop a large tablespoon of the mixture into your hands and shape into tot-like cylinders or fingers. If the mixture is too wet to shape, add a little more panko breadcrumbs.
- Bake: Preheat oven to 200°C (400°F). Place tots on a lined baking tray and bake for 20–25 minutes until cooked through and golden brown underneath.
- Enjoy: Let the tots cool for about 10 minutes before serving. Always test the temperature before offering to your little one.
Notes
This mixture is naturally soft and slightly wet. If shaping becomes difficult, simply add a small amount of extra panko breadcrumbs.
