Broccoli Tots 🥦

Ingredients:
  • 1/2 head broccoli, steamed (125g / 4.5oz)
  • 1 cup mild cheddar cheese (tasty cheese)
  • 1/2 cup panko breadcrumbs (or regular breadcrumbs)
  • 1 egg
Preparation method:
  1. Steam and mash broccoli: Steam the broccoli until very tender, then mash it well in a large bowl.
  2. Add remaining ingredients: Add the egg, breadcrumbs, and cheese to the mashed broccoli and mix well to combine.
  3. Shape into tots: Using wet hands, shape the mixture into tot shapes. If the mixture isn’t holding, mash it further or add an extra egg. If it’s too wet, add more breadcrumbs.
  4. Bake: Bake the tots at 180°C (350°F) for 20 minutes, or until the edges are starting to brown.

These broccoli tots are a fun and nutritious finger food, perfect for little hands and packed with veggie goodness! 💚
