Ingredients
- 1–2 apples
- 1 egg
- 3/4 cup non-dairy milk or milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 cup all-purpose flour
- Butter, for cooking
Directions
- Slice your apple into rings (about 1/4 inch thick). Thinner slices cook through more easily and are easier for little ones to eat. Use an apple corer, the bottom of a frosting tip, or a small cookie cutter to carve out the centers. You can use 1–2 apples depending on how much you want to make.
- In a bowl, whisk together the egg, milk, vanilla, cinnamon, and flour until smooth. The batter should be similar to pancake consistency.
- Heat a little butter on a non-stick pan over high-medium heat. Dip each apple ring into the batter, coating it completely, and place it on the pan. Cook for 2–3 minutes on each side.
- Cover and cook on low heat for an additional 8 minutes to cook the apples through and get a soft texture. Check throughout and flip if needed.
- Cool, serve & enjoy with a side of yogurt or maple syrup!
