Substitutions

What You Need

Ingredients

  • 1/2 cup + 3 tbsp all-purpose flour
  • 1/2 cup instant or rolled oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/3 cup avocado oil or any neutral oil
  • 1/4 cup maple syrup
  • 1 apple, diced very small

Directions

  1. Preheat your oven to 350ยฐF.
  2. In a medium bowl, whisk together the flour, oats, baking powder, and cinnamon.
  3. Add the avocado oil and maple syrup and mix until a soft dough forms.
  4. Peel and dice the apple into very small pieces.
  5. Add the apple to the dough and fold through gently.
  6. Scoop the dough onto a parchment paper-lined baking sheet.
  7. Lightly flatten each cookie, but not all the way.
  8. Bake for 12 minutes, until set but still soft. Do not overbake.
  9. Let cool completely before serving, as they will firm up more as they cool.
  10. Optional: drizzle yogurt on top before serving.
