Tuna Corn Fritters ππ½
On busy days when lunch needs to happen fast, these tuna corn fritters are one of my go-to recipes. They come together with simple ingredients, cook quickly, and make a healthy, filling meal. Crisp on the outside, soft on the inside, and perfect for quick lunches, lunchboxes, or light dinners.
Simple Ingredients, Big Nutrition π±
- Tuna π: Lean protein, omega-3s, and iron
- Corn π½: Natural sweetness, fiber, and energy
- Eggs π₯: Protein, healthy fats, and structure
- Flour πΎ: Helps bind everything together
Ingredients
- 1 canned tuna (drained)
- 1/2 cup canned corn (drained)
- 2 eggs
- 2 1/2 tbsp flour of choice (all-purpose, gluten-free, oat flour)
- Optional add-ons: green onion, herbs, shredded cheese, seasoning
Directions
- Drain the tuna and add it to a bowl.
- Mash the tuna, then add eggs, corn, and flour. Mix until combined.
- Heat a pan with a little oil. Form fritters and cook for about 3 minutes per side on medium heat, until golden and cooked through. Flatten slightly while cooking.
- Let cool slightly and serve with a dip, fruit, or side salad.
Notes
Storage: Refrigerate for up to 3 days.
Reheating: Reheat briefly in the microwave or toaster oven.
