What You Need

  • Grater
  • Loaf pan

Ingredients

  • 1 carrot (about 1/4 cup grated)
  • 1 sweet potato (1 cup grated)
  • 3–4 broccoli florets (about 1 cup, finely chopped)
  • 3 eggs
  • 1/2 cup shredded cheese, plus more for topping
  • 2 tbsp flour of choice
  • 1 tsp baking powder

Directions

  1. Prep vegetables: grate carrot and sweet potato, finely chop broccoli.
  2. Crack eggs into a bowl and whisk.
  3. Add veggies, cheese, flour, and baking powder. Mix well.
  4. Grease or line a loaf pan. Pour in mixture and sprinkle extra cheese on top.
  5. Bake at 350Β°F (180Β°C) for 30 minutes.
  6. Cool for 10 minutes, slice, and enjoy.

Notes

Storage: Refrigerate for 2–3 days or freeze for up to 1 month (best frozen in slices).

Reheating: Reheat in the microwave, thaw slightly, or enjoy cold.
