Vegetable Frittata Loaf π₯π₯¦π§

What You Need
- Grater
- Loaf pan
Ingredients
- 1 carrot (about 1/4 cup grated)
- 1 sweet potato (1 cup grated)
- 3β4 broccoli florets (about 1 cup, finely chopped)
- 3 eggs
- 1/2 cup shredded cheese, plus more for topping
- 2 tbsp flour of choice
- 1 tsp baking powder
Directions
- Prep vegetables: grate carrot and sweet potato, finely chop broccoli.
- Crack eggs into a bowl and whisk.
- Add veggies, cheese, flour, and baking powder. Mix well.
- Grease or line a loaf pan. Pour in mixture and sprinkle extra cheese on top.
- Bake at 350Β°F (180Β°C) for 30 minutes.
- Cool for 10 minutes, slice, and enjoy.
Notes
Storage: Refrigerate for 2β3 days or freeze for up to 1 month (best frozen in slices).
Reheating: Reheat in the microwave, thaw slightly, or enjoy cold.
